1 July — Maltese Sausage BBQ Parcels

 

A simple and flavour-packed BBQ recipe using Maltese sausage, vegetables and herbs, all cooked together in foil parcels on the grill. Perfect for an easy summer dinner with very little mess.

 

Serves: 4
Prep Time: 15 minutes
Cook Time: 25–30 minutes

 

Ingredients:

  • 4 Maltese sausages, cut into thick pieces
  • 500g baby potatoes, halved or quartered
  • 1 red onion, sliced
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 200g cherry tomatoes
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • A few fresh rosemary sprigs
  • Salt and pepper, to taste
  • Aluminium foil

 

Method:

  1. Parboil the baby potatoes for around 8–10 minutes, then drain.
  2. In a large bowl, mix the potatoes, Maltese sausage pieces, onion, peppers, cherry tomatoes, garlic, olive oil, oregano, rosemary, salt and pepper.
  3. Divide the mixture between large sheets of aluminium foil.
  4. Fold each sheet into a sealed parcel, making sure the edges are closed well.
  5. Preheat your Char-Broil grill to medium heat.
  6. Place the parcels on the grill and cook for 25–30 minutes, turning once halfway through.
  7. Carefully open the parcels and check that the sausage is cooked through and the potatoes are tender.
  8. Serve warm straight from the foil or with a fresh salad.

 

Char-Broil Tip:

For extra colour and flavour, open the foil parcels during the last 5 minutes of cooking and place the sausage pieces directly on the grill for a light char.
